Thai mussels


Ingredients
- 1 tbsp of olive oil
- 1 small onion, finely chopped
- 1 garlic clove, crushed and finely chopped
- 1 CAT of grated ginger
- 1 tbsp of yellow curry
- 250ml chicken broth
- 250ml coconut milk
- 2 pounds of well washed mussel
- 1 Tbsp of chopped cilantro
- Salt and pepper
Preparation
1- In a saucepan, put olive oil over medium heat.
2- Add the onion and garlic and sear well.
3- Add the ginger and mix well.
4- Add the curry and mix well.
5- Increase the heat and add the broth and coconut milk.
6- When the broth comes to a boil, put all the mussels and mix well.
7- Salt and pepper.
8- The mussels will be cooked when they open. Make sure this is the case.
9- Add the coriander and mix. Cover the pan for a minute. Turn off the heat and serve immediately.
