Spicy crushed cucumbers from Kim Phat

Spicy crushed cucumbers


  • 4 Lebanese cucumbers or 1 English cucumber, crushed with the back of a knife and cut into pieces
  • 1 Tbsp of sea salt
  • 2 Tbsp of rice vinegar
  • 2 garlic cloves, grated
  • 1 CAT of soy sauce
  • 1 CAT of granulated sugar
  • 1 bird's eye chilli, thinly sliced


1- Disgorge the pieces of cucumber by putting them in a fine colander and mixing them with the salt. Place the colander in a bowl and refrigerate for ten minutes.
2- In a bowl, put all the rest of the ingredients and mix.
3- Take out the cucumber pieces and drain well. Add to bowl mixture.
4- Put back in the refrigerator for about ten minutes to soak up the flavors.
5- Enjoy immediately.
