Salmon and scallop sashimi

Servings: 2 servings

Ingredients

  • 50g ultra fresh salmon cut into thin slices
  • 2 U10 scallops cut into thin slices
  • 1 CAT of mujol eggs
  • 1 CAT of fried onions
  • For the dressing:
  • 2 Tbsp finely chopped white onion, soaked in cold water for 5 minutes
  • 1 Tbsp unseasoned rice vinegar
  • 1 pinch of sugar
  • 1 pinch of mustard powder
  • 1 CAT of grape seed oil
  • 1 CAT of sesame oil
  • 2 cases of water
  • 1 pinch of salt
  • A turn of the pepper mill

Preparation

1. Prepare the dressing by mixing all the ingredients together.
2. Arrange the plates, alternating the slices of salmon and scallop.
3. Sprinkle with fried onions.
4. Add the mujol eggs.
5. Add dressing just before serving.
