Pandan cake

Ingredients

large fresh pandan leaves, well washed
1 CAT
of coconut milk
4
egg whites
3
egg yolks
1/4 t
of sugar
1/4 t
of flour
1 CAT
virgin coconut oil
1 cat
of baking powder
1 pinch
of salt
1 cat
green food coloring

Preparation

Step 1
Preheat oven to 350F.
Step 2
Mix the pandan leaves with the coconut milk and the equivalent amount of water. Take the mixture and strain it to draw more or less 1/2t.
Step 3
In a bowl, put the egg yolks and beat them with a third of the sugar until they whiten a little.
Step 4
Add pandan mixture and coconut oil. Mix well.
Step 5
Add flour and baking powder and coloring.
Step 6
In a separate bowl, whisk the water whites with the salt, add the remaining sugar and continue beating until peaks form.
Step 7
With a spatula, gently fold the egg whites into the egg mixture and pandan.
Step 8
Pour the mixture into a baking pan. Bake for about 30 minutes or until a toothpick inserted in the pan comes out clean.
Step 9
Taste immediately and store in a cloche.
