- large fresh pandan leaves, well washed

- virgin coconut oil

- of baking powder
- 1 pinch
- of salt
- 1 cat
- green food coloring
Preparation
- Step 1
- Preheat oven to 350F.
- Step 2
- Mix the pandan leaves with the coconut milk and the equivalent amount of water. Take the mixture and strain it to draw more or less 1/2t.
- Step 3
- In a bowl, put the egg yolks and beat them with a third of the sugar until they whiten a little.
- Step 4
- Add pandan mixture and coconut oil. Mix well.
- Step 5
- Add flour and baking powder and coloring.
- Step 6
- In a separate bowl, whisk the water whites with the salt, add the remaining sugar and continue beating until peaks form.
- Step 7
- With a spatula, gently fold the egg whites into the egg mixture and pandan.
- Step 8
- Pour the mixture into a baking pan. Bake for about 30 minutes or until a toothpick inserted in the pan comes out clean.
- Step 9
- Taste immediately and store in a cloche.
