Ingredients
- 1 pound
- of shrimp without tails, peeled and deveined
- 1 TAC
- of fish sauce
- 1 TAC
- gray shallot, finely chopped
- 1 clove
- garlic, crushed and finely chopped
- 2 TAC
- cornstarch
- 1 TAC
- brown sugar
- 1
- egg, beaten
- Pinch of salt
- 1
- grind of pepper
- 2 Tbsp.
- canola oil
- For each burger:
- One burger bun
- One slice of tomato
- Lettuce
- Homemade or Japanese mayonnaise
- Sriracha
Preparation
- Step 1
- Place shrimp, fish sauce, gray shallot, garlic, cornstarch, brown sugar, beaten egg, salt and pepper in a food processor
- Step 2
- Blend contents until well blended and reduced to a pureed texture.
- Step 3
- Transfer to a container and add 1 CAS of canola oil and mix well. Refrigerate for at least half an hour.
- Step 4
- In a steaming pan, put a wax paper the size of the pan and with a pair of scissors, make lots of holes.
- Step 5
- Take the mixture out of the refrigerator and with a spoon, carefully place the shrimp puree in a patty about the size of your burger bun. Do not handle with your hands. Repeat until you fill your pan.
- Step 6
- Steam for about 5 minutes. Place your patty on a plate. Repeat until there is no more shrimp puree.
- Step 7
- Put the remaining canola oil on a plate and with a brush, brush the shrimp patties on both sides.
- Step 8
- With the BBQ grill at maximum power, grill the shrimp patties for a few minutes (this step is to consolidate the patties).
- Step 9
- Place the shrimp patty between two buns, add a slice of tomato and lettuce and add mayonnaise and sriracha.
