Lotus salad with shrimps

Ingredients

½
cucumber, peeled and julienned
1 tsp.
of salt in a bowl of cold water
250 g ( ½ lb )
lotus stems (sold in glass containers), washed, drained and cut into pieces of about 5 cm
2 tbsp.
rau ram, chopped
8
cooked, peeled and deveined medium shrimp
1 tablespoon
unsalted peanuts, crushed
4 branches
cilantro, chopped
2 tbsp.
fried onions (sold in small plastic pots)
For the vinaigrette
1 ½ tbsp.
of sugar
2 tbsp.
of lime juice
125 ml ( ½ t )
of improved fish sauce
1 clove
garlic, crushed
1 tsp.
by sambal oelek

Directions

Step 1
In a bowl, combine all dressing ingredients and stir until sugar is completely dissolved. Set aside.
Step 2
Place the julienned cucumber in the bowl of salted water for 15 minutes to drain. Drain well.
Step 3
In a large plate, combine the lotus stems and cucumber. Add the chopped rau ram, shrimp, peanuts, coriander and fried onions.
Step 4
Pour the dressing over the salad.
