Cold somen noodles with sauce for hot days

Ingredients

200g
of somen noodles
2 sprigs
chopped green shallots (or chives)
250 ml
dashi broth
65 ml
Japanese soy sauce, reduced in salt
150 ml
mirin
1 tbsp
sesame oil
Pieces of "galçons" (pebbles)

Directions

Step 1
Cook noodles according to package instructions. Rinse well with cold water, drain and set aside.
Step 2
In a non-reactive saucepan, combine broth, soy sauce and mirin. Bring to a boil for 5 minutes. Put the pot in a sink of cold water.
Step 3
Divide noodles among 4 plates and sprinkle with chopped green onions.
Step 4
Pour sauce into 4 individual bowls.
Step 5
Add sesame oil to the noodles and place ice cubes on top.
Step 6
Serve immediately by dipping the noodles in the bowl of sauce.
Step 7
Ideal for a lunch on hot days.
