Ingredients
- 200g
- of somen noodles
- 2 sprigs
- chopped green shallots (or chives)
- 250 ml
- dashi broth
- 65 ml
- Japanese soy sauce, reduced in salt
- 150 ml
- mirin
- 1 tbsp
- sesame oil
- Pieces of "galçons" (pebbles)
Directions
- Step 1
- Cook noodles according to package instructions. Rinse well with cold water, drain and set aside.
- Step 2
- In a non-reactive saucepan, combine broth, soy sauce and mirin. Bring to a boil for 5 minutes. Put the pot in a sink of cold water.
- Step 3
- Divide noodles among 4 plates and sprinkle with chopped green onions.
- Step 4
- Pour sauce into 4 individual bowls.
- Step 5
- Add sesame oil to the noodles and place ice cubes on top.
- Step 6
- Serve immediately by dipping the noodles in the bowl of sauce.
- Step 7
- Ideal for a lunch on hot days.
